or a good one for that matter. I know RB's are usually known for rush yards, yards per carry, TD's. QB's passing yards, TD-INT, QB %. things like that. So what is it for offensive lineman. Or are there things other than stats that make an offensive lineman get noticed for being good.

how well they block their defender (pancake blocks)
number of sacks they've given up
number of yards the RB's average when running behind them

it is hard to have exact stats but

low number of sacks and high avg rushing yards  would be metrics for a starting point,

of course if the QB gets sacked 35 times from the right side in a season but not once from the left, you might have a probowl left tackle.  (you need a new RT) also you need to watch to see how well this OL does at creating holes for the RB.  in the end you need to watch the film, you can't just look at a stat sheet like you can with a RB.

I don't think it's a stats based position.  Sacks given up, of course, but a lot of this stuff is determined by popularity.  And good O-Linemen get their names mentioned by commentators a lot, so it weighs into it a lot, I'm sure.

I think with tackles the good ones don't get their names mentioned much.  Its the bad ones whose names you here.

You see the left tackle was was suppose to push the DE away from the pocket but instead gave the DE a clear shot to the QB for the 3rd time today.  Bang now thats a hit.  And Joe Shomo an UDFA from Central Columbia County School of Cosmotogy is getting ready for his first snap as an NFL QB.  What must be going thru his mind only two weeks ago he was signed to the practice squad and left his job at McDonalds.
